Oregon and Washington BlueBerries Cheesecake Recipe

Time for a simple Oregon and Washington BlueBerries Cheesecake Recipe. This Oregon and Washington BlueBerries Cheesecake Recipe is easy to do and this is non bake cheesecake and the blueberries explode in your mouth.

The kids loved the cheesecake as the blueberry explodes in your mouth with a burst of juice and flavours. Why Blueberries?

Blueberries are naturally sweet, tart and nutritious – making them a beloved superfood. Not to mention they are so appealing to the eyes as well. 

It’s little wonder that blueberries have huge benefits and are known to be a heart-healthy superfood that’s so easy to include in your daily life. The highly versatile blueberries can be enjoyed as it is – a snack, or incorporated into various recipes. They are widely used in salads, baked items, desserts, smoothies.- making them a convenient fruit to visually enhance and energise any meal.

Research findings indicate blueberries contain antioxidants and other nutrients that aid our bodies to stay healthy and may help prevent age-related diseases.  

Blueberries are certified as a heart-healthy food by the American Heart Association and contain natural compounds that help the brain stay strong.

Here are the Oregon and Washington BlueBerries Cheesecake Recipe:

Ingredients for blueberry puree:

200g fresh blueberry

70g tbsp castor sugar

¾ tbsp lemon juice

Gelatin (2 tsp gelatin + 2-3 tbsp hot water)

Ingredients for crust base:

11 pieces Oreo biscuits (no sugar filling) or 11 pieces of Tiger choc biscuits

35g butter

Ingredients for cheese layer:

250g cream cheese

50g tbsp castor sugar

Gelatin (2 tsp gelatin + 2-3 tbsp hot water)

150ml dairy whipping cream

For the Crust base, you need to crush the biscuits first and then mix it with 35 butter. Then you set it as the base of the cake mould.

For the Blueberry puree, you need to cook the blueberries with 70g castor sugar first. Next, add it with the ¾ tbsp lemon juice and gelatin (2 tsp gelatin + 2-3 tbsp hot water). Do not crush the blueberries, just cook until you get the beautiful colour of the puree.

For the Cheese layer, you need to mix the 250g cream cheese and then add the 50g castor sugar. Mix it with the whipping cream and the gelatin.

Pour the cheese layer onto the chocolate biscuits base. Lastly, just add the blueberry puree on top of the cheesecake. Remember to cling wrap it and let it chill overnight.

You can take out the cheesecake on the next day and it is ready to eat as no baking is necessary. The texture of the cake is creamy, strong in cheese flavour while the blueberry is sweet and addictive. Every bite of the blueberry will explode inside your mouth giving you that unexpected moment.

Our boys loved this exploding blueberries cheesecake and we will make another one this weekend. We know the blueberries cheesecake might not look perfect but the taste will surprise you!
