We were at Chef Pom Chinese Cuisine By Todd for lunch with our Thai friends. We ordered some of the signature dishes and new dishes from new their menu. Let’s start!
This is a popular ‘cold dish’ in Chinese restaurant and it is called drunken chicken as it is compliment with Chinese wine. The Chinese wine enhances the flavour of the chicken and they added dry ice onto the wine to give the smoke effect. The wine offers aromatic flavour that enhances the taste and texture of the chicken.
We love how they make the colour of the skin to dark red. For the taste, you get the flavour of the foie gras and its creamy texture. This is heavenly.
CHEF POM Fortune Box comes with 5 pieces of their signature dim sum. Each and every one of them offers different taste and this is the creation of Chef Pom. This is a must order if you are dining alone or in a small group.
Chef Pom’s creativity can be seen in the colours of the dumpling. The Matcha wasabi oil har gow comes with fresh shrimps with hints of wasabi taste. This is our first time having a har gow with wasabi oil.
The usual rice noodles are translucent and white in colour and it is interesting how Chef Pom makes it black with squid ink. Usually squid ink is used to make black coloured pastas and noodles and this is our first time having black coloured rice noodles.
Traditionally, the filling is either shrimp or char siew but this is crispy shrimp instead. You get the soft layer texture of the black ink rice noodles and the crispy bitey texture of the shrimp filling.
For chicken feet lovers, this is a must order. Their steamed chicken feet comes with spicy sauce and this is exquisite.
Please take a look at the shape and colour of this dumpling. There are bits of caviar, salmon roe and fried shallots on the top. You can taste the freshness of the scallops and hints of saltiness from the caviar and the salmon roe with the crispy texture of the shallots and creamy texture of the salmon roe. This is why you need to come to Chef Pom Chinese Cuisine by Todd, it’s the skills and the technique of the chef.
This is a familiar dish in most Chinese family. Steamed pork spare ribs with chili tobanjan sauce (soy bean paste). Sometimes, we add some black beans for more flavours but this is a traditional Chinese dish. It is easy to cook as you put everything together and steam.
The texture of the pork spare ribs is soft with the flavours of the chili tobanjan sauce with hints of spicy after taste. This is very enjoyable.
This is another masterpiece by Chef Pom. This is our first time seeing fried taro with charcoal with the filling of foie gras and complement with hoi sin sauce.
Have you seen such a black crispy taro? Within this crispy crunchy texture of the outer layer, the filling is the soft texture of foie gras mixed with egg. It is like red lava within black crust. The colour is this dish is striking and the taste is memorable.
Crispy fried hotate (scallop) with salted egg mayo with ham, asparagus and curry leaves. Zoom in the picture and look at that size of the fried scallop. The fried scallop is quite big in size and the texture is crispy. You get the different textures of the crispy scallop, crunchy asparagus and crispy ham. We love the flavour of the scallop and also their version of salted egg mayo.
We ended the lunch with the dessert called Sweet Trio Dragon Ball with Chilled Ginger Tea. You can see the smoke effect of the chilled ginger tea using the dry ice.
